Savoury bread pudding with colby

Who says dessert has to be sweet? Try this yummy savoury dish!

(Serves 8)

You’ll need:

450g pork breakfast sausage

1 cup onion; chopped

8 cups seven-grain bread or other wholegrain bread; cut into 2½ cm cubes

1½ cups Wisconsin Colby Cheese; grated

4 eggs; slightly beaten

3¼ cups milk

2 tbsp. fresh sage; chopped, or 1 tsp. dried sage leaves; crushed

½ tsp. salt

½ tsp. freshly ground black pepper

Preheat the oven to 190 °C.

In a large skillet, brown the sausage and onions and drain. In a large bowl, combine the cooked sausage, onions, bread cubes and 1 cup of the cheese. Toss to combine.

In a medium bowl, beat the eggs, milk, sage, salt, and pepper. Pour over the bread mixture and mix well. Cover and let stand for 30 min., or cover and refrigerate overnight.

Lightly grease 33cm x 23cm baking dish. Pour bread mixture into baking dish. Bake for 35 - 45 min., or until golden brown and centre is set. Sprinkle with remaining cheese. Bake another 2 min., or until the cheese is melted. Let stand 10 min. before serving.
