Seafood laksa

Serves 6 Preparation time: 10 min Cooking time: 30 min

1 packet (80 g) laksa paste 1 can (410 g) coconut milk 800 ml chicken or vegetable stock 5 ml (1 t) paprika 300 g prawns 300 g mussels in shell halves 300 g haddock, cut into pieces 100 g calamari tubes salt and freshly ground black pepper 250 g vermicelli 30 ml (2 t) fresh coriander

Bring the laksa paste, coconut milk, chicken or vegetable stock and paprika to the boil in a saucepan.

Reduce the heat and simmer for about 10 minutes or until fragrant.

Add the prawns, mussels, haddock and calamari to the liquid and bring to the boil again.

Cook for about 10 minutes or until the seafood is done.

Season with salt and freshly ground black pepper.

Add the vermicelli and simmer for about 5 minutes or until done.

Stir in the coriander and ladle the soup into bowls.
