Smoked snoek salad

P Swart of Lynn East, Pretoria, sent us the original recipe.

Serves 6

Preparation time: 15 min


60 ml (¼ c) honey

15 ml (1 T) lemon juice

10 ml (2 t) wholegrain mustard

125 ml (½ c) plain yoghurt


600 g smoked snoek, bones removed and flaked

1 red onion, finely chopped

6 gherkins, chopped

60 ml (¼ c) chopped dried apricots

15 ml (1 T) chopped fresh parsley

onion sprouts

cos lettuce leaves


Mix the ingredients and set aside.


Combine all the ingredients excluding the lettuce leaves and toss with a little dressing.

Arrange the lettuce leaves in serving bowls and spoon the salad on top.

Garnish with sprouts.

Serve with extra dressing.
