Spicy Egg Fried Rice

Versatile rice turns every meal into an extraordinary meal

Serves 4-6

Preparation time: 10 min

Cooking time: 15 min

250 g bacon, cut into pieces

30 ml (2 T) sweet soy sauce

30 ml (2 T) vegetable oil

3 eggs, whisked

salt and white pepper

500 ml (2 c) Spekko Fragrant rice, cooked (1 c uncooked makes 3½ c cooked rice)

1 green chilli, seeded and chopped

1 red pepper, sliced

3 spring onions, chopped

1 lime

2 red chillies, chopped

1 In a pan fry the bacon until crisp. Add the soy sauce and stir-fry for a minute. Remove from the pan and set aside on kitchen paper.

2 In a separate pan or a wok, heat the oil and cook the eggs with salt and pepper, stirring until the eggs are lightly scrambled but still runny.

3 Add the rice, chilli and pepper to the wok and stir-fry for a few minutes, using chopsticks or a wooden spoon.

4 While heating the rice, add the bacon and spring onions. Season with salt and pepper, mix well and serve hot with a squeeze of lime juice and freshly chopped chillies.
