Steaks stuffed with feta and olives

Serves 4

Preparation time: 15 min

Cooking time: about 10 min

4 steaks of 160 g each (sirloin, rump or porterhouse)

150 g feta cheese, crumbled

80 g black olives, stoned

30 ml (2 T) fresh herbs such as basil, thyme and mint

juice and rind of 1 large lemon

30 ml (2 T) olive oil

4 cloves garlic, crushed

5 ml (1 t) Worcester sauce

salt and freshly ground blackpepper

Make an incision in the side of each steak.

Place the feta, olives, herbs, lemon juice and rind in a food processor and pulse until smooth. Spoon some of the filling into each of the steaks and secure with toothpicks.

Mix the olive oil, garlic and Worcester sauce and drizzle over the meat.

Braai the steaks over hot coals until done to each guest’s liking.

Baste the meat with the marinade and season with salt and pepper as you braai.

Serve with baby potatoes.
