Steaks with mozzarella

Serves 4

Preparation time: 20 min

Cooking time: 10-15 min


4 thin steaks (about 120 g each)

60 ml (¼ c) cake flour


3 eggs

60 ml (¼ c) cake flour

100 ml milk

5 ml (1 t) finely chopped fresh basil

salt and freshly ground black pepper

15 ml (1 T) finely chopped parsley

30 ml (2 T) finely grated Parmesan cheese


50 g butter

50 ml oil

125 ml mozzarella cheese, grated

pinch paprika


Dust the steaks with flour, shaking off the excess.

Leave the steaks to rest in the fridge for about 10 minutes.


Whisk the eggs and add the flour, mixing until smooth.

Mix together the milk, basil, salt, pepper, parsley and Parmesan cheese and whisk well.


Heat the butter and oil in a large pan, dip the steaks in the batter and fry in the heated butter and oil until brown on both sides.

Switch on the oven grill.

Arrange the fried steaks on a baking sheet and scatter over the mozzarella cheese and paprika.

Tip: Minute steaks are ideal if you don’t have plenty of time for preparation. Ask your butcher for thick steaks and cut them into thinner slices at home; this will ensure the meat is juicier.
