Steamed fish

Venicia Guinot of Yeoville has a very special way with steamed fish

Serves 4

Preparation time: 10-15 min

Cooking time: 15 min

2 hake fillets

5 ml (1 t) fresh ginger, sliced

2 garlic cloves, chopped

1 red chilli, chopped

grated zest and juice of 1 lemon

100 g baby spinach

30 ml (2 T) soy sauce

1.    Put each fish fillet on a large square of aluminium foil and add half the ginger, garlic, chilli, lemon zest and juice to each. Scatter spinach around and on top of the fish.

2.    Pour the soy sauce over the spinach and loosely seal the foil to make a parcel.

3.    Steam for 15 minutes. If you don’t have a steamer, put the parcel on a heatproof plate over a saucepan of simmering water, cover with a lid and steam.

4.    Serve with rice.
