Sticky stir-fried chicken

Serves 4.

Oil, for frying

1 onion, thinly sliced

4 garlic cloves, chopped

15 ml (1 T) grated fresh ginger

4 chicken breasts (skinless and boneless), sliced in strips

60 ml (1/4 c) honey

30 ml (2 T) soy sauce

15 ml (1 T) sweet chilli sauce

250 g broccoli, cut into pieces

salt and freshly ground black pepper to taste

3 spring onions, chopped

Heat a little oil in a wok or large pan until very hot.

Fry the onion quickly, add the garlic, ginger and chicken and fry until almost done.

Add the honey, soy sauce, chilli sauce and broccoli and fry until the broccoli is just done and the sauce is sticky.

Season to taste with salt and black pepper and sprinkle with spring onions.

Serve immediately on noodles or rice.
