Sumptuous sweet potato pastry

Winning recipe by Carene Malan of Jeffreys Bay (Huisgenoot)

Serves 6-8 Preparation time: 15 min Baking time: 30-35 min

  • 3 big sweet potatoes, peeled and cooked
  • 400 g readymade puff pastry roll
  • 80 ml (? c) brown sugar
  • 5 ml (1 t) cinnamon
  • extra sugar and cinnamon for sprinkling
  • 500 ml (2 c) cream

1 Preheat the oven to 180 °C. Grease an ovenproof dish.

2 Mash the sweet potatoes until smooth and mix in the sugar and cinnamon.

3 Unroll the pastry and spoon the mashed sweet potatoes on top. Roll up like a Swiss roll.

4 Cut the pastry into slices and pack them in the prepared dish. Sprinkle more sugar and cinnamon on top and pour the cream over. Bake for 25-30 minutes or until the pastry is done.

5 Serve with ice cream or custard.
