Tasty, tangy tomatoes

If you don’t feel like ordinary tomatoes try these tomato products to add zest to your meals.

1.     Tomato and onion smoor

Take 1 can tomato and onion smoor and cook over low heat. Stir in 4 chopped garlic cloves. Add 30 ml (2 T) red wine vinegar and cook for 10 minutes until fragrant. Season with salt and pepper. Add 500 g fresh cherry tomatoes. Serve on linguini pasta and sprinkle Parmesan cheese over.

2.     Napoletana sauce

Cut 200 g eggplant into pieces. Stir-fry in oil with 1 chopped onion until soft. Mix 350 g Napoletana pasta sauce through the eggplant mixture and cook for 5 minutes. Add chopped basil leaves and season with salt and pepper. Serve with screw noodles.

3.     Sundried tomato pesto

Take 150 g sundried tomato pesto and add 60 g chopped almonds. Add a handful of chopped black olives and season with salt and pepper. Brush 4 portions of hake with olive oil. Spread the sundried tomato pesto over the fish and sprinkle with feta cheese. Bake for 15 minutes in the oven at 180 °C until done. Serve with a green salad.
