The perfect meringues that melt in your mouth

By adding meringue to your desserts you can transform something simple into an exceptional dish. YOU’s food editor, Carmen Niehaus, provides three easy, delicious ideas for meringue.

Basic recipe for meringue:

  1. Beat 4 egg whites together and add 250 ml (1 cup) caster sugar and a pinch each of cream of tartar and salt gradually until the meringue is stiff and shiny.
  2. Spread the meringue around poached fruit such as nectarines or pears. Place on a baking tray and bake at 120 °C for about 40 minutes until done. Turn off oven and allow to cool in oven.
  3. Make two rough circles of meringue on two lined baking trays dusted with corn flour and bake for 40 minutes until done. Allow to cool and place them on top of each other with stiffly beaten cream. Dish granadilla pulp on top.
  4. Place two large piles of meringue on covered baking trays dusted with corn flour and bake until done. Allow to cool. Make a purée of berries, a little sugar and a few drops of balsamic vinegar. Dish up over the mini-pavlovas and round off with fresh berries.
