The three-ingredient cheesecake that's taking over the internet

Finally, an internet craze we can really sink our teeth into.

This three-ingredient, Japanese soufflé cheesecake has sent social media users into a frenzy!

Over two-million have viewed this nifty little video, uploaded by Japanese YouTuber Ochikeron. The step-by-step tutorial explains how to create the sumptuous dish, also known as Japanese cotton cheesecake, using only eggs, white chocolate and cream cheese.

If you're not up to watching the video, here's how to make it*:


  • 3 eggs
  • 120g white chocolate
  • 120g cream cheese

1. Preheat the oven to 170C.

2. Separate the eggs and place the whites in a mixing bowl. Place egg whites in the fridge to keep them cold (you'll need them later).

3. Break the chocolate into smaller pieces and place in a large bowl. Place the bowl over hot water (60C) to melt the chocolate.

4. One it's melted, mix in cream cheese. Remove bowl from hear and mix in egg yolks.

5. In a separate bowl, whip up eggs whites with an electric mixer until firm. You should be able to turn the bowl upside down without the mixture falling out.

6. Add 1/3 of the whites to cream cheese mixture, and mix well with a spatula. Continue adding in egg whites bit by bit, and mix well.

7. Line a cake tin with wax paper. Pour the batter into the tin and drop the tin gently on the counter to raise the air bubbles out of the batter.

8. Place the cake tin on a shallow baking tray, and pour hot water into the tray. Bake at 170C  for 15 minutes, 160C  for 15 minutes, then stop the heat and bake with the remaining heat for 15 minutes.
