Tomato parcels

Serves 4

Preparation time: 15-20 min

Cooking time: about 10-15 min

500 g baby tomatoes (use a variety of colours and shapes if you like)

16 cloves garlic, peeled

handful of basil leaves

salt and freshly ground black pepper

100 g mozzarella, cut into thin slices

Cut four 15 cm squares from baking paper and tinfoil.

Put the tinfoil squares on a work surface and place a baking paper square on each one.

Divide the tomatoes, garlic cloves and basil among the four parcels, season with salt and pepper and pile a few

layers of cheese slices on the tomatoes.

Fold the baking paper into a parcel, then do the same with the tinfoil. Braai over medium coals and give each person a parcel.

Tip: Warn guests to be careful when opening the parcels – the steam could burn them.
