Try the New York Strip Steak

Checkers recently introduced the New York Strip Steak to the wonderful offering from their butchery. Try this mouth-watering recipe for steak, coleslaw and corn on the cob.

New York Strip Steaks are a magnificently tender cut, so rather don’t marinade it as this leads to loss of texture. A bit of dry rub and a splash of barbecue sauce is all you need.

  • Serves 4

For the steak you’ll need:

  • 4 New York Strip Steaks
  • Dry rub of choice
  • 2 tbsp. vegetable oil
  • 2 tbsp. barbecue sauce
  • Salt and pepper

Set a pan over high heat. Rub your steaks with the rub of your choice and spice with salt and pepper. Brush with oil on all sides and fry for 3–4 min. a side. Brush with barbecue sauce and allow resting for 5–8 min. before serving.

For the coleslaw you’ll need:

  • 2 cups green cabbage; finely shredded
  • 1 cup red cabbage; finely shredded
  • 2 large carrots; grated
  • 2 sprigs spring onion; chopped
  • Handful mint leaves; roughly chopped
  • 4 radishes; finely sliced
  • Handful pumpkin seeds

For the dressing you’ll need:

  • 1 clove garlic; crushed
  • ¼ cup rice vinegar
  • Pinch of castor sugar
  • Juice and zest of 1 lemon
  • 3 tbsp. olive oil
  • Salt and pepper; to season

Combine all the salad ingredients in a mixing bowl. Combine the garlic, rice vinegar, sugar, lemon juice, zest and olive oil and shake in a closed jam jar. Pour over the salad and toss to combine. Check seasoning and add salt and pepper.

For the corn on the cob you’ll need:

  • 4 heads of corn on the cob
  • 1 small red chilli; halved, deseeded and finely chopped
  • 2 tbsp. honey
  • ¼ cup butter
  • Juice and zest of 1 lime
  • Salt and freshly ground black pepper

Cut each head of corn into 4–5 rings. Boil in a large saucepan with boiling water for 8–10 min. or until tender. Drain. Heat the chilli, honey and butter together in a microwave for a min. Add the lime juice and zest. Toss the corn in the chilli butter and season with salt and pepper.
