Tuna and cheese toasted sandwiches

Serves 4

Preparation time: about 15 min

Cooking time: about 10-15 min

8 slices of bread of your choice

about 40 g soft butter or margarine

125 ml mayonnaise

2 cans (175 g each) tuna, drained

1 small onion, finely chopped

2 gherkins, finely chopped

handful of parsley or fresh dill, finely chopped

salt and freshly ground black pepper

about 50 g mozzarella cheese, sliced

1. Preheat the oven to 180 °C.

2. Arrange the bread slices on a work surface and spread both sides of the bread with soft butter or margarine.

3. Mix the mayonnaise, tuna, onion, gherkins, parsley, salt and pepper and spoon it on top of the bread slices.

4. Scatter the cheese over the tuna mixture and gently press it down. Cover with the remaining bread slices.

5. Arrange the sandwiches on a baking sheet and toast for about 10 minutes or until golden and the cheese has melted. Toast the sandwiches in a sandwich toaster if available.

6. Serve with a green salad.
