Tuna and chickpea patties

Tired of traditional fish cakes or meat patties? Chickpeas to the rescue

 Serves 6

Preparation time: 35 min

Cooking time: 10 min

1 can (410 g) chickpeas

60 ml (¼ c) olive oil

1 can (170 g) tuna

1 carrot, grated

1 onion, finely chopped

2 garlic cloves, chopped

handful of fresh coriander, chopped

handful of fresh parsley, chopped

3 drops fish sauce

freshly ground black pepper

5 ml (1 t) chilli flakes

juice of ½ lemon

250 ml (1 c) breadcrumbs

15 ml (1 T) oil

6 burger rolls

salad leaves

chutney and mayonnaise to serve

1 Blitz the chickpeas and oil in a food processor to form a purée. Transfer to a bowl.

2 Add the tuna, carrot, onion, garlic, coriander, parsley, fish sauce, pepper, chilli flakes and lemon juice. Stir well to combine. Shape the mixture into 6 patties, cover and refrigerate for 30 minutes.

3 Coat the patties with the breadcrumbs. Heat the oil in a pan and fry the patties until golden on both sides. Drain on paper towels.

4 Put the patties on the rolls with salad leaves. Top with a dollop of chutney and serve with mayonnaise on the side.
