Tuna rice salad

A lovely salad, ready to serve within half an hour

Serves 4

Preparation time: 10 min

Cooking time: 20 min

500 ml (2 c) rice, cooked and chilled

2 cans (170 g each) tuna, flaked

250 ml (1 c) frozen peas, defrosted

1 red pepper, diced

2 tomatoes, chopped

3 spring onions, sliced

handful of parsley, chopped

60 ml (¼ c) mayonnaise

juice of 1 lemon

30 ml (2 T) olive oil

salt and freshly ground black pepper

1    Put the rice and tuna in a large bowl. Mix in the peas, red pepper, tomatoes, spring onions and parsley.

2    Stir through the mayonnaise, lemon juice and olive oil and season with salt and pepper.
