Ultimate BBQ chicken pizza

The homemade BBQ sauce is a real crowd-pleaser. Keep some on hand as your secret ingredient for all sorts of meat dishes.

Serves 6 Preparation: 15 min Rising: 30 min Cooking: 40 min


375ml (1½ c) warm water

7 g dried yeast

1 ml (¼ t) caster sugar

4 x 250 ml (4 c) flour

2 ml (½ t) salt

60 ml (¼ cup) olive oil


3 garlic cloves, chopped

45 ml (3 T) dark brown sugar

2 ml (½ t) chilli flakes

200 ml (¾ c) tomato sauce

45 ml (3 T) Worcester sauce

2 ml (½ t) English mustard powder

30 ml (2 T) barbeque spice

200 ml (¾ c) cola

salt and paper


15 ml (1 T) oil

3 chicken breasts

½ red onion, thinly sliced

500 ml (2 c) grated mozzarella cheese

handful of fresh coriander, chopped

1 Pizza dough: Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy.

2 Mix the flour and salt in a large bowl and make a well in the middle. Add the yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until the mixture is combined. Use your hands to bring the dough together in the bowl.

3 Brush a separate bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Transfer to the greased bowl and turn to coat in the oil. Cover with clingfilm and set aside in a warm, place to rise for 30 minutes or until double in volume.

4 BBQ sauce: Mix the ingredients to combine well.

5 Topping: Heat the oil in a pan over medium heat and cook the chicken for 10 minutes. Brush the chicken with BBQ sauce and continue cooking and brushing with sauce for another 10 minutes or until done. Transfer to a cutting board and slice.

6 Roll out the dough into two large pizzas and transfer to a large baking sheet. Using a brush or the back of a soup spoon spread BBQ sauce evenly over the dough. Bake for 10 minutes.

7 Sprinkle the sliced chicken and red onion on the crust. Top with the cheese and return to the oven for 8 minutes or until the cheese has melted. Sprinkle the coriander on top and serve.
