Vegetable crisps with onion cheese dip

Replace that packet of chips with these healthy munchies for weekend braai snacks.

Serves 6 Preparation: 15 min Cooking: 20 min

  •  30 ml (2 T) oil
  • 2,5 ml (½ t) cayenne pepper
  • salt and pepper
  • 2 beetroots, sliced
  • 1 medium sweet potato, sliced


  • 1 onion, chopped
  • 250 g cream cheese
  • 300 g mozzarella cheese, grated
  • 125 ml (½ c) mayonnaise
  • handful parsley, chopped
  • salt and pepper

Preheat the oven to 200 °C.

1      Combine the oil, cayenne pepper and salt and pepper in a small bowl. Rub the vegetables with the cayenne pepper mixture.

2      Place the vegetables on a wire rack over a baking sheet and bake for 10 minutes.

3      Dip In a blender combine the onion, cream cheese, mozzarella and mayonnaise. Blend until smooth. Fold in the parsley and season. Transfer the mixture to a small baking dish and bake for 15 minutes or until golden. Cool and serve with crisp vegetables.
