Vegetable patties on brown mushrooms

What a super idea for Meatless Mondays - and any other day!

Preparation time: 15 min

Cooking time: 15 min

Makes: 6 patties

500 ml (2 c) of quinoa

5 ml (1 t) oil

125 g mushrooms, finely chopped

2 large carrots, chopped

½ onion, finely chopped

3 garlic cloves, finely chopped

1 egg, whisked

45 ml (3 T) flour

salt and freshly ground black pepper

30 ml (2 T) fresh parsley, finely chopped

5 ml (1 t) Cajun spice

Cook the quinoa according to the packet instructions.

Heat the oil over medium heat in a pan.

Fry the mushrooms, carrots, onion and garlic for 5 minutes or until soft.

Set aside to cool.

Add the cooked quinoa, stirring in the egg, flour salt and pepper, parsley and Cajun spice.

Firmly press out the mixture on a plate or cutting board to form 6 patties.

Fry two patties at a time over medium heat for 5 minutes on each side or until golden.

Serve with brown mushrooms, topped with sun-dried tomatoes
