Vegetable stir-fry with cheese and grapes

Looking for something different to serve on Meatless Monday? Here's a great solution

Serves 4

Preparation time: 5 min

Cooking time: 20 min

250 ml (1 c) jasmine rice

45 ml (3 T) soy sauce

45 ml (3 T) hoisin sauce

30 ml (2 T) balsamic vinegar

30 ml (2 T) sweet chilli sauce

15 ml (1 T) cornflour

125 ml (½ c) water

15 ml (1 T) oil

2 leeks, sliced

2 garlic cloves, sliced

15 ml (1 T) grated ginger

100 g mushrooms, chopped

100 g grapes, halved

50 g Ricotta cheese, cubed

1 Cook the rice according to the packet instructions.

2 Mix the soy sauce, hoisin sauce, vinegar, sweet chilli sauce, cornflour and water in a bowl until smooth.

3 Heat the oil in a pan over medium heat. Add the leeks, garlic and ginger and stir-fry lightly. Add the mushrooms and grapes and sauté for 3 minutes. Add the soy sauce mixture and ricotta cheese and simmer for 5 minutes.

4 Spoon the rice and the stir-fry into bowls and serve.
