Vegetarian burgers

How about a juicy, yummy, irresistible burger for today - and fear's perfect for vegetarians!

Serves 6

Preparation and chilling time: 40 min

Cooking time: 5-8 min


2 cans (400 g each) mixed beans

1 onion, chopped

2 garlic cloves, chopped

2 ml (½ t) ground cumin

2 ml (½ t) ground coriander

handful of parsley, chopped

2 ml (½ t) chilli powder

30 ml (2 T) flour

salt and pepper


125 g hummus

30 ml (2 T) olive oil

15 ml (1 T) lemon juice

15 ml (1 T) honey

15 ml (1 T) tahini (sesame paste)


oil for deep-frying

6 rolls

1 tomato, sliced

1 red onion, sliced

butter lettuce

1 Patties: Put the beans in a food processor with the rest of the ingredients and blitz until you have a paste with a coarse texture. Shape into thick patties. Chill in the freezer for 30 minutes or until firm.

2 Sauce: Put all the ingredients in a bowl and whisk until well incorporated.

2 To complete: Fry the patties in hot oil for 5-8 minutes or until golden on both sides.

4 Split the rolls. Spread the bottom half of each with the sauce and top with a burger patty, lettuce, tomato and onion. Cover with the top halves of the rolls.
