White bean and red pepper soup

Serves 4

Preparation time: 20 min

Cooking time: 40 min

30 ml (2 T) olive oil

1 onion, roughly chopped

2 garlic cloves, roughly chopped

1 celery stalk, roughly chopped

2 red peppers, roughly chopped

1 chilli, seeded and finely chopped

5 ml (1 t) paprika

1 can (410 g) white kidney beans (cannellini)

2 cans (410 g each) chopped tomatoes

500 ml (2 c) vegetable stock

15 ml (1 T) sugar

salt and freshly ground black pepper

chopped fresh parsley to garnish

1 heat the olive oil in a pan and fry the onion, garlic and celery for a few minutes.

2 add the red peppers, chilli and paprika and fry for 1 minute.

3 add the beans, tomatoes, stock and sugar and bring the mixture to the boil. reduce the heat and simmer for 10 minutes.

4 season with salt and pepper to taste and serve with freshly baked bread. Garnish with parsley.
