Bacon, banana and brie with whisky and cumin onion marmalade

Onion marmalade

45ml (3T) olive oil

2 onions, thinly sliced

30ml (2T) ground cumin

60ml (¼c) whisky

125ml (½c) brown sugar

5ml (1t) vanilla essence

5ml (1t) salt

15ml (1T) vinegar


400g Eskort Back Bacon

200g black brie cheese or brie cheese of your choice, sliced

8 banana bread slices (your favourite store-bought banana bread)

60ml (2T) butter

fresh rocket 


Onion marmalade

  • Add the olive oil to a pan and fry the onions over medium heat until golden and soft.
  • Add the rest of the ingredients and reduce the heat. Simmer for 10-15 minutes.


  • In a frying pan over a high heat, fry the bacon until crispy.
  • Layer the bacon and sliced brie on a banana bread slice and top with onion marmalade.
  • Sandwich together with another bread slice.
  • Melt the butter in a pan and toast the sandwiches until the brie has melted.
  • Serve with rocket and extra onion marmalade
