Bacon & cauliflower fritters

We’re getting our fritter on in the #JustDelicious kitchen – try these bacon and cauli fritters. They’re quick, easy and so delicious.


1 head cauliflower

2 large eggs

200g Eskort Bacon Cutts, chopped into little pieces

3 spring onions, finely sliced

1 green chilli, finely chopped

200g all-purpose flour

2,5ml baking powder

250g cheddar cheese, grated


freshly ground black pepper

oil, for frying

125ml sour cream, to garnish

small handful chives, chopped to garnish


  • Break the cauliflower head into florets.
  • Bring a pot of salted water to the boil and add the cauliflower. Reduce the heat to a simmer and allow the cauliflower to cook until just tender.
  • Drain well and pat dry, then smash with a fork until it resembles mash. Set aside to cool.
  • In a bowl whisk the eggs, then mix in the bacon, spring onions, chilli, 2 tablespoons of the flour and baking powder. Mix well.
  • Add the cauliflower, cheese, remaining flour and season with salt and pepper. Mix well.
  • Cover the bottom of a large frying pan generously with oil and heat over medium heat.
  • Drop tablespoonfuls of batter into the pan, flatten slightly and cook until golden brown. Flip and cook until golden brown on the other side.
  • Remove and drain on paper towels.
  • Repeat until all the fritters are cooked.
  • Serve with a dollop of sour cream and chopped chives.
