Bacon choc chip cookies

Nothing says “I love you Mom” quite like these #JustDelicious cookies, baked with that extra special ingredient . . . love. Plus there’s enough to share with the whole family!

Ingrdients

200g Eskort Back Bacon, finely chopped

250ml (1c) butter, softened

150ml (?c) brown sugar

150ml (?c) white sugar

5ml (1t) vanilla essence

2 eggs

400ml flour

5ml (1t) baking powder

pinch of salt

250ml (1c) dark chocolate chips

60g (¼c) butter

120ml (½c) maple syrup

100g (about ?c) icing sugar

Method

  • Preheat the oven to 180°C and grease a baking sheet with nonstick spray or line it with baking paper.
  • Heat a frying pan and lightly fry the bacon until just cooked, remove from heat and allow to cool (cut into smaller pieces if necessary).
  • Using a hand beater or food processor, mix the butter, sugars, vanilla essence and eggs until smooth and creamy.
  • In another bowl, sift together the flour, baking powder and salt.
  • Add the dry ingredients to the butter mixture and stir. The dough should be slightly soft still.
  • Add the chocolate chips and bacon and mix well.
  • Cover the dough with cling film and place in the fridge for at least an hour to set.
  • Remove from the fridge, pinch off pieces of the dough, roll into balls and arrange on the baking sheet, leaving at least 1cm between each.
  • Flatten the balls slightly using your fingers.
  • Bake in the oven for 10-12 minutes until the biscuits have turned golden. Remove from the oven and allow to cool on a wire rack.
  • Repeat the process with the remaining dough.
  • In a small saucepan over low heat, melt the butter and maple syrup, whisking occasionally.
  • Remove from heat and whisk in the icing sugar.
  • Set the glaze aside to cool and thicken.
  • Drizzle the cooled biscuits with the glaze, allowing it to set before serving.
