Battered russians with tequila lime pickle and ginger mayo

Ingredients

Batter

250ml (1c) self-raising flour

125ml (½c) cornflour

15ml (1T) baking powder

350ml ice-cold water

5ml (1t) cayenne pepper

Russians

500g Eskort Smoked Russians

flour for coating

Pickle

zest and juice of 1 lime

60ml (¼c) tequila

30ml (2T) olive oil

5ml (1t) coarse salt

30ml (2T) vinegar

45ml (3T) castor sugar

salt and pepper

2 sweet potatoes, thinly sliced

1 garlic clove, chopped

60ml (¼c) chopped spring onion

Ginger mayo

125ml (½c) mayonnaise

10ml (2t) grated fresh ginger

 

Method

Batter

  • In a large bowl, mix the self-raising flour, cornflour, baking powder, water and cayenne pepper until a smooth batter forms.
  • Chill in the fridge for 15 minutes.

 Russians

  • Lightly coat the Russians with flour and dip in the batter.
  • Deep-fry the battered Russians until golden and crispy.

 Pickle

  • In a mixing bowl, combine the lime zest and juice, tequila, olive oil, salt, vinegar, castor sugar, salt and pepper.
  • Add the sweet potato, garlic and spring onion and mix well.
  •  Store the pickle in a jar in the fridge for no longer than a week.

 Ginger mayo

  • Squeeze the juice out of the grated ginger, either through a sieve or clean kitchen cloth.
  •  Mix the ginger juice with your mayonnaise and store in the fridge.
  •  Top your deep-fried Russians with the sweet potato pickle and serve with ginger mayo on the side.
