BBQ ribs with chakalaka bread pudding and green salad

This cheesy chakalaka bread pudding adds some solid flavour to this #JustDelicious meal!


BBQ Ribs

2 x 750g Eskort BBQ Ribs

Chakalaka Bread Pudding

1l (4c) crusty bread cubes

4 eggs

250ml (1c) cream

410g (1 tin) spicy chakalaka

250ml (1c) grated cheddar

Green Salad

2 handfuls of mixed lettuce

1 handful of wild rocket

1 handful of watercress

Yoghurt Dressing

125ml (½c) plain yoghurt

60ml (¼c) granadilla pulp

Juice and zest from one lemon



  • Prepare a braai fire with enough coals to braai the ribs.

Chakalaka Bread Pudding

  • Preheat the oven to 185°C.
  • Place the bread cubes into a greased oven dish.
  • In a bowl, mix the eggs, cream and chakalaka until well combined.
  • Pour the chakalaka mixture over the bread cubes and cover with cheese.
  • Bake for 20 minutes.

BBQ Ribs

  • While the bread pudding bakes, braai the ribs for 10 minutes on each side.

Green Salad

  • In a salad bowl, toss all the greens together.

Yoghurt Dressing

  • In a small bowl, add all the ingredients and mix well.

To serve

  • Slice the ribs and serve with a generous portion of hot bread pudding and green salad drizzled with yoghurt dressing.
