Bobotie frikkadels in yoghurt with chilli scrambled eggs on coriander rice

Ingredients

Frikkadels in yoghurt

350g Eskort Mini Frikkadels

1 onion, sliced

45ml (3T) olive oil

45ml (3T) butter

45ml (3T) bobotie spice mix

375ml (1½c) full cream plain yoghurt

Chilli scrambled eggs

45ml (3T) olive oil

1 red chilli, chopped

4 eggs

60ml (¼c) sour cream

salt and freshly ground black pepper

Coriander rice

45ml (3T) olive oil

125ml (½c) leeks, chopped

5ml (1t) ground cumin

60ml (¼c) fresh coriander, chopped

1L (4c) cooked rice of preference

salt and freshly ground black pepper

 

Method

Frikkadels in yoghurt

  • In a frying pan over medium heat, fry the onion in olive oil and butter until glossy.
  • Add bobotie spice mix and the frikkadels and fry for 8 minutes.
  • Add the yoghurt, stir through and turn off the heat.

Chilli scrambled eggs

  • Add olive oil to a frying pan over moderate heat and fry the chilli.
  • Separate the eggs then add the egg whites to the pan.
  • Scramble until completely cooked, then add the yolks.
  • Stir until well combined and cooked, then remove from the heat. Stir in the sour cream and keep aside.

Coriander rice

  • Add olive oil to a pan over moderate heat and fry the leeks, then add the cumin and coriander.
  • Add the leek mixture and rice to a bowl, season with salt and pepper and mix well.
  • Serve the frikkadels and scrambled eggs on a bed of coriander rice.
