Breakfast tacos

These #JustDelicious breakfast tacos are super-quick and easy and so satisfying!  


4 Eskort Russians, sliced

30ml (2T) olive oil

1 onion, chopped

2 garlic cloves, finely chopped 4 tortillas

4 eggs, fried

salt and ground black pepper

2 spring onions, sliced

50g feta cheese, crumbled

lemon wedges for serving


  • Heat the oil in a pan and fry the Russians until browned. Remove from the pan and set aside.
  • Fry the onion and garlic until softened. Return the Russians to the pan, toss to combine and continue cooking until the onion and garlic have browned. Remove from the heat and set aside.
  • Heat the tortillas according to the package instructions. Fry the eggs, then assemble the tacos with a layer of the onion and Russians mixture and top with some spring onions, feta cheese and an egg.
  • Serve warm with the lemon wedges.
