Cheesy Garlic Pap with Zesty Rashers and Crispy Onions

Cheesy garlic pap 

15 ml (1 T) butter 

1 garlic clove, chopped 

625 ml (2½c) hot water 

2,5 ml (½t) black pepper

125 ml (½c) mealie meal 

60 ml (¼c) cheddar cheese

Zesty rashers and crispy onions

1 pack of Eskort Zesty Citrus Pork Rashers 

1 onion, thinly sliced oil, for deep-frying 


Cheesy Garlic Pap 

  • Put a small pot on the stove over moderate heat.
  • Add the butter and fry the garlic until it starts to brown. 
  • Slowly add the water and allow it to start boiling.
  • Add the black pepper and slowly whisk the mealie meal in.
  • Cover the pot with a lid, turn down the heat and cook for five minutes.
  • Once the porridge is cooked, add the cheddar cheese and mix it in as it melts. 

Zesty Rashers and Crispy Onions

  • While the porridge is cooking, add the rashers to a hot pan and fry on both sides until golden and slightly crisp.
  • Set aside. 
  • Heat a shallow pot of oil over a moderate heat and fry the thinly sliced onions until golden and crispy. 

To serve:

  • Dish the pap on a plate, add the zesty rashers alongside it and top with the crispy onions. 

Extra information:

This meal is gluten-free. For the lactose intolerant, substitute the cheddar for a dairy-free cheese. Layers of melt-in-your-mouth flavour!
