Chicken & onion focaccia with balsamic cream cheese

Chicken and onion focaccia

1kg store-bought dough

45ml (3T) olive oil

800g Eskort Chicken Braai Burgers, sliced into fingers

8 shallots, cut lengthwise into quarters

45ml (3T) fresh thyme

5ml (1t) coarse salt

60ml (¼c) green olives, chopped

Balsamic cream cheese

30ml (2T) balsamic vinegar

250ml (1c) cream cheese

15ml (1T) golden syrup


  • Preheat the oven to 190°C.
  • Chicken and Onion Focaccia Roll the dough out on a lightly floured surface, place on a large oven tray and drizzle with olive oil.
  • Place the chicken burger fingers, shallots, thyme, coarse salt and green olives on the dough. 
  • Bake for 20 minutes.
  • Balsamic Cream Cheese While the focaccia is in the oven, combine the balsamic vinegar, cream cheese and golden syrup in a small mixing bowl.
  • To serve Slice the focaccia and serve with the balsamic cream cheese.
