Orange, Garlic and Pear Gammon with Pea, Feta and Bacon Salad



1 Eskort Smoked Gammon about 1,3kg

3 pears, thinly sliced lengthways

5 garlic cloves, roughly chopped

salt and pepper

125ml (½c) brown sugar

1l orange juice

Pea salad

200g Eskort Bacon Cutts/200g Diced Bacon

500g fresh green peas

30ml (2T) olive oil

2 croissants

50g rocket

50g mint

50g baby spinach

250g Danish feta, crumbled



  • Preheat the oven to 190°C.
  • Place the gammon in a deep roasting pan or casserole dish lined with baking paper and coat with the brown sugar, salt and pepper.
  • Place the pears and garlic on top of the gammon, covering as much of the meat as possible.
  • Pour over the orange juice then wrap the gammon in two layers of foil.
  • Bake for 60 minutes.

Pea salad

  • Pulse the peas in a food processor two to three times to break up slightly.
  • Fry the bacon in a medium saucepan over high heat until crispy. Remove from the pan and add the olive oil.
  • Tear the croissants into bite-sized pieces and fry until crispy on the outside.
  • Place rocket, mint and baby spinach in a salad dish or large bowl and top with the bacon, croissants and feta.

To serve

  • Thinly slice the gammon, drizzle with the pan sauces and serve with the salad.
