Continental toasted ham & peach breakfast

Shy cooks can spoil their partners with this #JustDelicious toasted breakfast.

Ingredients

125g Eskort Wiltshire Ham

40g (2?T) butter

4 slices rye bread

MASCARPONE SPREAD

125ml (½c) mascarpone cheese

125ml (½c) icing sugar

5ml (1t) vanilla essence

fresh thyme, chopped

PEACHES

20ml (1?T) lemon juice

2 peaches or nectarines, halved

60ml (¼c) castor sugar

TO SERVE

125g (½c) Brie cheese

 

Method

  • Melt the butter in a frying pan and toast the bread slices.

Mascarpone spread:

  • In a mixing bowl, whip the cheese, icing sugar and vanilla essence then add the thyme.

Peaches:

  • Squeeze the lemon juice over the peach or nectarine halves, dip into the castor sugar and fry face down and fry until golden

To serve:

  • Spread the toast with the mascarpone mixture and top with ham, brie and peaches or nectarines.
