200g Eskort Rindless Streaky Bacon

250ml (1c) dark chocolate

30ml (2T) candied ginger

30ml (2T) candied orange

65ml (¼c) almond flakes

30ml (2T) coarse salt


  • Preheat the oven to 190°C.
  • Line a baking sheet with baking paper, arrange the bacon on top and cook until crispy. Remove from the oven and allow to cool.
  • Melt the chocolate in a double boiler.Dip three-quarters of the bacon into the melted chocolate then place on a cooling rack.
  • Sprinkle the bacon with the candied ginger and orange and the toasted almond flakes while the chocolate hasn’t set yet.Sprinkle with coarse salt.
