ESKORT: Caprese salad & frikkadel kebabs

Since this summer is so smokin’ hot we thought we should cool it down in the kitchen. These #JustDelicious kebabs are easy, quick, and light – perfect for a grab-n-go snack in the afternoon


15ml olive oil

1 box Eskort Mini Frikkadels

100g ready-made basil pesto

100g cream cheese

1 punnet fresh basil leaves

1 punnet cherry or rosa tomatoes

150g bocconcini or mozzarella cheese

8 wooden skewers


  • Heat olive oil in a frying pan and fry frikkadels until heated through.
  • In a bowl, mix the basil pesto and cream cheese and set aside.
  • Thread a frikkadel onto a skewer, followed by a basil leaf, a tomato and a piece of cheese. Repeat until the skewer is full.
  • Repeat with remaining ingredients and skewers.
  • Serve skewers with the basil pesto cream cheese as a dip.
