ESKORT : Fancy mac and cheese

Ingredients

Cheese sauce 

30ml butter

50g flour

500ml milk

250ml cream

salt to taste

freshly ground black pepper to taste

5ml mustard powder

100g cheddar cheese, grated

100g mozzarella cheese, grated

50g parmesan cheese, grated

Macaroni

8 Eskort Chicken & Cheese Viennas, sliced

500g macaroni

85g sundried tomatoes, chopped

5ml Italian herb seasoning

salt

freshly ground black pepper

60g cheddar cheese, grated

60g mozzarella cheese, grated

30g parmesan cheese, grated

250ml breadcrumbs

small handful fresh chives, chopped, to garnish

Method 

Preheat oven to 180°C.

  • Cheese sauce In a saucepan melt the butter, add the flour and stir until smooth and well combined.
  • Add the milk and cream and start stirring to incorporate the flour mixture.
  • Season with salt and pepper and add the mustard powder and cheeses. Continue stirring until the cheeses are melted and the sauce has thickened and is smooth (use a whisk if it starts getting lumpy).
  • Remove from the heat and set aside.
  • Macaroni Cook the macaroni for 10 minutes, drain and place in a large bowl.
  • Add the chicken and cheese viennas, sundried tomatoes and Italian seasoning to the macaroni.
  • Season lightly with salt and pepper and toss everything together.
  • Add the cheese sauce and mix well so that all the macaroni is coated.
  • Mix the cheddar, mozzarella and parmesan cheeses together with the breadcrumbs in a separate bowl.
  • Transfer the macaroni mixture to a casserole dish and sprinkle the cheese and breadcrumb mixture over.
  • Place in the oven and cook for 25-30 minutes until the top is golden brown.
  • Remove from the oven and serve hot with a sprinkle of fresh chives.
