ESKORT: Pasta & pork salad

Serves 4 | Preparation: 10 min | Cooking: 20 min

Don’t sweat it out in the kitchen – this no-mess, no-fuss summer salad is #JustDelicious and perfect for lunch 

INGREDIENTS

500 g pasta shapes

15 ml butter

175 g broccoli florets

2 Eskort Smoked Pork Neck Steaks

salt

freshly ground black pepper 

10 ml olive oil

60 ml honey

30 ml rice vinegar

30 ml soy sauce

15 ml sesame oil

2 spring onions, sliced

150 g corn kernels


METHOD

  • Cook the pasta according to the packet instructions.
  • Drain and set aside.
  • Heat the butter in a frying pan and sauté the broccoli until just tender.
  • Remove from the pan and set aside.
  • Season the pork neck steaks with salt and pepper.
  • Heat the olive oil in the same pan and fry the steaks for 8-10 minutes, turning once or twice until cooked.
  • Remove from the heat and set aside.
  • Make a dressing by mixing together the honey, vinegar, soy sauce and sesame oil.
  • Cut the steaks into slices.
  • In a large bowl toss together the pasta, broccoli, steak, spring onions, corn and dressing.
  • Season with salt and pepper and serve.
