Ingredients
375g Eskort Jalapeño Pork Sausages
1kg baby potatoes, halved
3 peaches, quartered
250ml (1c) chopped leeks,
125ml (1/2c) olive oil
45ml (3T) whole grain mustard
salt and pepper to taste
To serve
salad greens
Method
- Preheat the oven to 190°C.
- Line a deep-dish oven pan with baking paper and add the sausages, baby potatoes, peaches and leeks.
- In a small jug, combine the olive oil and mustard and season with salt and pepper.
- Pour the mixture over the sausages and potatoes and mix well until combined.
- Bake in the oven for 35 minutes.
- To serve Serve with fresh salad greens.
