Gnocchi with smoked russians and marinated tomatoes

500g Eskort Smoked Russians, sliced

300g uncooked gnocchi


60ml (¼c) olive oil

500g jam tomatoes, halved

2 garlic cloves, chopped

15ml (1T) brown sugar

30ml (2T) red wine vinegar

zest and juice of 1 lemon

5g fresh oregano

5g fresh basil

freshly ground pepper

fresh herbs for garnishing


  • Bring a large pot of salted water to a rolling boil and cook the gnocchi according to the packet instructions.
  • While the gnocchi is cooking, place a large frying pan over a moderate heat. Add olive oil and fry the tomatoes until the skins loosen.
  • Reduce the heat, add the Russians and garlic and stir.
  • Add the sugar and vinegar and cook, stirring occasionally, until the sugar dissolves.
  • Remove the pan from the heat, add the lemon zest and juice, oregano and basil, and stir to combine.
  • Plate a portion of gnocchi and spoon over some russians and tomatoes. Garnish with the herbs and serve.
