Guacamole and bacon breakfast sandwich

This #JustDelicious go-to bacon and avo sandwich will make tummies so happy!


2 ripe avocados

15ml lemon juice

½ small red chilli, finely chopped

salt and ground black pepper

60ml butter

4 slices sourdough bread

200g pack Eskort Rindless Back Bacon

4 large eggs

fresh rocket


  • Scoop the flesh of the avocados into a bowl. Add lemon juice and chilli and season with salt and pepper.
  • Using a fork, mash the avocado until mixed well and no lumps remain. Set aside.
  • Heat a little butter in a large frying pan. Toast each slice of sourdough bread on both sides until browned. Set aside.
  • In the same pan, add a little more butter and fry the bacon. Set aside.
  • In a clean pan, heat a little butter and fry or scramble the eggs to your liking.
  • Assemble the sandwiches with a layer of rocket and a generous dollop of avocado, topped with bacon and egg.
  • Season with salt and pepper and serve.
