Ham & broccoli baked potatoes

It’s that time of the year when there’s a chill in the air so we’re keeping things cosy and warm with a #JustDelicious comforting dinner dish!


4 large potatoes

salt and freshly ground black pepper

200g broccoli florets

20ml butter

200g Eskort Chopped Ham Roll, diced

100g cheddar cheese, grated

200ml double-cream yoghurt

chives, finely chopped


  • Preheat the oven to 200°C.
  • Boil the potatoes in a pot of water until cooked through. Remove from the heat, drain and put them on a baking tray.
  • Slice the potatoes open, being careful not to cut all the way through and season with salt and pepper.
  • In a pot of salted water, cook the broccoli florets until just tender but still bright in colour. Drain and set aside.
  • Top each potato with a teaspoon of butter, broccoli florets, diced ham and cheese.
  • Put the baking tray in the oven and bake for 10-15 minutes until the cheese has melted.
  • Remove from the oven and serve the potatoes warm with a dollop of yoghurt and a sprinkling of chives.
