Hot dog with roasted green tomato open sarmie

Roasted green tomatoes

500g green tomatoes, cut in half

60ml (¼c) olive oil

juice of 1 lemon

salt and freshly ground pepper

125ml (½c) fresh basil


2 x 380g Eskort American Hot Dog, Smoked Gourmet Chili Cheese

1 ciabatta loaf

olive oil for drizzling

salt and freshly ground pepper

90g mozzarella cheese, grated

90g parmesan cheese, grated

1 clove garlic, finely chopped


Roasted green tomatoes

  • Preheat the oven to 200°C.
  • Place the green tomatoes on a baking sheet and drizzle with olive oil.
  • Squeeze the lemon juice over and season with salt and pepper.
  • Sprinkle with basil and bake for 10-15 minutes.


  • Place 4 slices of ciabatta on a baking sheet.
  • Drizzle with olive oil and season with salt and pepper.
  • Place two sausages on each ciabatta slice and top with mozzarella and parmesan.
  • Sprinkle with garlic and bake in the oven for 10 minutes until the cheese has melted and is starting to turn golden.
  • Top with the roasted tomatoes and basil and sprinkle with fresh basil.
