Italian-style sausages & with peppers

1 packet Eskort Beef Sausages

60ml olive oil

1 red pepper, deseeded and sliced

1 yellow pepper, deseeded and sliced

1 green pepper, deseeded and sliced

1 onion, sliced into half-moons

3 cloves garlic, chopped


freshly ground black pepper

5ml origanum

2,5ml chilli flakes

30ml tomato paste

1 can chopped tomatoes

To serve

fresh Italian parsley, to garnish

4 continental rolls


  • Fry the sausages in a little oil in a large frying pan until brown and cooked through. Remove from heat and set aside.
  • In the same pan, add the peppers, onions and garlic and fry until just starting to soften. Add salt, pepper, origanum and chilli flakes and lightly toss to combine. Stir-fry for 2-3 minutes, then add tomato paste and mix well. Then add the chopped tomatoes.
  • Mix all ingredients together and simmer for 3-4 minutes.
  • Slice the cooked sausages and return to the pan with the tomato mixture. Cook until the sauce has thickened, then remove from heat.

To serve

  • Slice and butter the rolls and spoon some sausage mix into each.
  • Garnish with parsley and serve warm. Instead of rolls you could also serve this dish with your favourite starch – such as rice, couscous or mashed potatoes.
