Marinated ribs & loaded veggie salad

We got dibs on the ribs! #JustDelicious and made for Braai Day – marinated ribs and a wholesome veg salad. 


1kg Eskort Marinated Spare Ribs

1 can (410g) chickpeas, rinsed and drained

1 can (410g) black beans, rinsed and drained

1 can (410g) corn kernels

500g baby tomatoes, halved

1 red chilli, finely sliced

1 green chilli, finely sliced

1 red onion, sliced into half moons

1 avocado, diced

handful fresh coriander, chopped

juice of 1 lemon

50ml (¼c) olive oil

salt and ground black pepper


  • Place all the ingredients in a large salad bowl and mix well. Cover and refrigerate until ready to serve.
  • Braai the marinated spare ribs according to the package instructions and serve with the veggie salad.
