Mince and Thyme Ravioli

Filled with a #JustDelicious zesty mixture of pork mince, thyme and cheese, our handmade ravioli is cooked al dente, drizzled with olive oil and served in a rich, creamy onion and vanilla sauce.

Ingredients

Mince filling

125ml (½c) Eskort Pork Mince

15ml (1T) olive oil

salt and pepper

15 ml (1T) thyme

60ml (4T) grana padano cheese or Parmesan cheese

zest of 1 lemon

Ravioli pasta

250ml white bread flour

2 eggs, separated

30ml (2T) water

5ml (1t) coarse salt

15ml (1T) olive oil

Onion and vanilla sauce

15ml (1T) olive oil

1 onion, grated

5ml (1t) black pepper

10ml (2t) vanilla essence

125ml (½c) white wine

250ml (1c) pasta water

125ml (½c) fresh cream

Method

Mince

  • Heat the oil in a medium-sized frying pan over medium heat
  • Season the mince with salt and pepper, add the thyme and fry until cooked. Add the cheese and lemon zest.

Ravioli pasta

  • In a large mixing bowl add the flour, egg yolks, water, salt and olive oil. Mix by hand until a sticky dough forms. Slowly add more water if too dry.
  • Knead for 5-10 minutes until smooth.
  • Place the dough in a mixing bowl and cover with clingfilm. Refrigerate for 15-30 minutes.
  • Roll out the dough thinly on a lightly floured surface. Use a cookie cutter or glass to cut out 3 cm circles.
  • Brush the edges of the circles with egg white.
  • Add a teaspoon of the mince filling to each circle.
  • Cover with another circle and press down on the edges to close the ravioli.
  • In a large pot, heat water over a high heat and add a pinch of salt.
  • Cook the ravioli for 8 minutes until it’s al dente.
  • Remove from the water with a slotted spoon and drizzle with olive oil
  • Save 250ml (1c) pasta water for the sauce.

Onion and vanilla sauce

  • Place a saucepan over a medium heat, add the olive oil and fry the onion and pepper until cooked.
  • Add the vanilla essence, wine and pasta water and cook until the sauce reduces.
  • Add the ravioli to the sauce and cook for another 5 minutes.
