Mini pizza quesadilla

Preparation: 15 min | Cooking: 20 min | Serves 4

A cross between a pizza and a quesadilla, just bite-sized and #JustDelicious.


1 packet Eskort Smoked Viennas, sliced lengthwise


1 punnet white mushrooms, sliced

4 wholewheat tortillas

275g mozzarella cheese, grated

125ml 1/2c tomato pasta sauce

1 green pepper, sliced

1 red pepper, sliced

15m olive oil


  • Heat the butter in a pan and cook the mushrooms over medium heat until just soft. Remove from the heat and set aside.
  • Place the tortillas on a flat surface and sprinkle some cheese on one half of each tortilla followed by 2 tablespoons of pasta sauce.
  • Divide the green and red peppers between the tortillas and top with some mushrooms.
  • Place a sliced viennas on each tortilla, then sprinkle over the remaining cheese.
  • Fold the tortillas over, pressing lightly.
  • Heat the olive oil in a nonstick pan over medium heat.
  • Place two quesadillas at a time in the plan and brown lightly both sides.
  • Cool slightly then divide each quesadilla into 3 to 4 triangles. Enjoy!
