Quinoa, bacon & herb salad

Ingredients

375g Eskort Diced Bacon

80g (1/3c) slivered almonds

15ml (1T) olive oil

½ onion, finely chopped

250g (1c) quinoa, rinsed

500ml (2c) chicken stock

1 sprig thyme

15g (1T) fresh chives, finely chopped

15g (1T) fresh parsley, finely chopped

salt and ground black pepper

Method

  • Toast the slivered almonds in a heated pan until golden brown, tossing occasionally to brown both sides. Remove from the pan and set aside to cool.
  • Heat the oil in the same pan and cook the bacon until almost crispy. Remove from the pan and set aside, reserving the bacon juices.
  • In the same pan, fry the onion until softened.
  • Add the quinoa, stock and thyme and bring to the boil. Cover and cook over low heat until the stock has been absorbed, about 17 minutes.
  • Remove the quinoa mixture from the heat and stand covered for 5 minutes.
  • Discard the thyme sprig and fluff the quinoa with a fork.
  • Stir in the bacon, chives, parsley and almonds.
  • Season the quinoa with salt and pepper and serve.
