Russians, pap and grilled tomatoes and baby cabbage

Ingredients

Pap

1 litre hot water

5ml (1t) coarse salt

15ml (1T) black pepper

750ml maize meal

TOMATOES AND BABY CABBAGE

500g large ripe jam tomatoes

1 small head cabbage, cut into eighths

60ml (1/4c) olive oil

zest and juice of one lemon

15ml (1T) coarse salt

15ml (1T) freshly ground black pepper

ESKORT SMOKED RUSSIANS

60ml (1/4c) sunflower oil

500g Eskort Smoked Russians

2 green chillies, chopped

1 bunch spring onions

Method 

Preheat the oven to 200°C.

Pap

  • Heat water in a medium-size pot over high heat, add salt and black pepper.
  • Bring the water to the boil and slowly add the maize meal while stirring with a whisk.
  • Cover and lower the temperature. Leave to simmer for 10-15 minutes and then set aside.

Oven grilled tomatoes and baby cabbage

  • Line a baking sheet with baking paper.
  • Slice a cross at the top of each tomato and place them with the cabbage on the baking sheet. Drizzle olive oil and lemon juice over, and add the lemon zest on top.
  • Season with salt and pepper and bake in the oven for 20 minutes.

Eskort Smoked Russians

  • Place a medium-size saucepan over a high heat, add oil and fry the Russians for 2 minutes on each side.
  • Serve Russians with the pap and top with the tomatoes and cabbage.
  • Garnish with fresh chilies and spring onions.
