Rustic Greek-style Sausage & Peppers

This simple yet #JustDelicious dish is quick and easy and soon becomes a firm family favourite!


375g Eskort Mediterranean Pork Sausages

30ml (2T) olive oil

2 red peppers, seeds removed and cut into strips

1 green pepper, seeds removed and cut into strips

5ml (1t) chilli flakes

1 red onion, finely sliced

2 garlic cloves, finely sliced

1 can (400g) diced tomatoes

15ml (1T) tomato paste

125ml (½c) red wine

5ml (1t) origanum

5ml (1t) paprika

salt and ground black pepper

crusty bread to serve


  • Heat a little of the olive oil in a pan and fry the sausages until browned and cooked through.
  • Remove from the pan, cool slightly and cut into coins.
  • Add a little more oil to the pan and cook the peppers, chilli flakes, onion and garlic until softened.
  • Add the tomatoes, tomato paste, wine, origanum and paprika and bring to the boil.
  • Season with salt and pepper, reduce the heat and simmer for 20 minutes.
  • Return the sausages to the pan, mix through and simmer for another 5 minutes until the sausages are heated through and the mixture has slightly reduced and thickened.
  • Serve hot with the bread to mop up the juices!
